Ingredients
- Sourdough 1 to 2 slices
- Eggs 2
- Avocado 1/2
- Ricotta 1 tablespoon
- Lemon juice 1 teaspoon
- ChamCham Tiger Crunch, to season
- Olive oil
- Chives, finely sliced
1. Toast the sourdough
- Drizzle a little olive oil on the sourdough and toast until golden and crisp.
2. Make the avocado ricotta smash
- In a bowl, mash avocado with ricotta, lemon juice and a pinch of Tiger Crunch. Mix until creamy but still slightly chunky.
3. Cook the eggs
- Heat a pan with olive oil and fry the eggs to your liking. While cooking, season the eggs with Tiger Crunch.
4. Assemble
- Spread the avocado ricotta smash generously over the toasted sourdough. Place the fried eggs on top.
5. Finish
- Garnish with extra Tiger Crunch, sliced chives and a small drizzle of olive oil. Serve straight away.
